Sweet Potato Hummus:

Portions : 8 | Preparation : 5 minutes| Cooking time : 20 minutes

Ingredients (yield : 500ml (2 cups))

1 medium sweet potato, peeled and cut in cubes
1 garlic clove
1 can of chick peas (540ml), rinced and drained
45 ml (3 tbsp) of olive oil
60 ml (¼ cup) of water
5 ml (1 tsp) of paprika
5 ml (1 tsp) of ground cumin
15 ml (1 tbsp) of honey
Juice of one lemon
Salt and pepper to taste

Preparation

1. Preheat the oven at 400°F (200°C)
2. Cook (steam) the sweet potato until tender (around 15-20 minutes).
3. Slice the top of the head of garlic and wrap it in paper aluminum . Bake until garlic is tender (approximately 20 minutes).
4. In blender or processor, process all ingredients, including sweet potatoes and roasted garlic until smooth.
5. Adjust seasoning with salt and pepper.
