A much needed rest day. It’s nice to give your body a break when needed! Here is our recipe for the week. Enjoy!
Beet and apple salad with feta cheese

Portions: 4 | Preparation: 10-15 minutes

Ingredients: 

2 beets (red or yellow), peeled, cooked, and diced in small cubes

2 French onions, chopped

1 apple, diced in small cubes

1/2 cup of coriander, chopped

100g of feta cheese, diced in small cubes

Juice of one lemon

10 ml (2 tsp) of apple vinegar

15 ml (1 tbsp) of olive oil

Black pepper, to taste

Preparation: 
In a bowl, mix all of the ingredients. Add black pepper.
